You Can't Make This Stuff Up! A Confession and A Simple Recipe!!

I need to ask my great bakers, and there are many of you on my blog, how many times you have made sour milk for a recipe? I am talking adding vinegar or lemon juice to milk and then letting it sour. I'm guessing too many times to count. Of course, I have done the same, it's a gimme in some baked products. Now, I am going to ask how many of you have thrown out sour milk that actually has soured without a thought? Once again, I raise my hand. Today I opened a carton of half and half that had soured. My fault, it was purchased ages ago and never used. I immediately headed to my sink to pour it out and thought I wonder if I can bake something with this and not waste it? Are you serious? Yup, you can't make this stuff up! It's heck to get old!!

These days with prices soaring it is essential families do not waste an ounce of food. I truly feel for large families right now and have shared through the last several years on here some hopefully helpful tips and ideas on how to waste less and use everything possible in your possession. We all want to treat our families now and then; everyone deserves a treat. So, if you are lucky enough to have some sour milk, no matter how you acquired it, give this recipe a try!

Here is my simple, go to sour milk coffee cake:

Oven temp 350, time 25-30 minutes (see note)

Whisk together

2 cups flour of choice, I use white whole wheat

1 teaspoon baking soda

½ teaspoon salt

2/3 to ¾ cup of sugar

1 heaping teaspoon of cinnamon or to taste

Mix well

1 cup sour milk

½ cup of oil of choice (have used applesauce here instead)

1 ½ teaspoons vanilla

Add wet to dry

Spread half of batter into a 9x9 sprayed pan (see note)

Sprinkle chopped nuts, or chocolate chips, or a cinnamon/

sugar mixture in a light layer (optional)

Top with remaining batter

Bake according to pan size

Note: you can use an 8x8 pan for a thicker result but will need to add an additional few minutes to the baking time.

This is a very basic coffee cake recipe that can be tweaked a lot, my type of recipe. Make it your own signature recipe with your ideas.
