That One Recipe We Can Remember; I Am Sharing Mine Today!!

We all have that recipe that we can make without thinking, make in our sleep and is the most requested from our family. The one we always make sure we have all the ingredients on hand. The one we make for holidays, or gift to a friend, the one that always comes out right. Today, I am sharing mine with you. I am going to give it exactly how I make it. There are also many different items that can be of course changed to your liking and some that are of course optional. If you are celebrating a big family Easter, this might be nice to add to your menu.

Here is what I do and the ingredients I use:

Preheated 350-degree oven

Measure and mix my dry ingredients first, always

1 3/4 cups of white whole wheat flour

1 tsp of baking soda

1/2 tsp of baking powder

1/8 tsp salt

2 tsp cinnamon

1/2 cup chocolate chips (always add to dry ingredients to coat to keep from sinking to bottom) optional

1/3 to 1/2 cups toasted shredded coconut (I buy mine online toasted) optional

Next, I combine my wet ingredients in a separate bowl:

2 beaten large eggs

1/2 cup canola oil

Scant 1/2 cup white sugar

1/4 cup brown sugar, I use dark always

1 cup of chunky applesauce, homemade, preferably sugar free (you could use store bought and smooth as well)

1/4 cup plain yogurt, preferably Greek

1 1/2 tsp vanilla

Add wet to dry, batter will be a little stiff

Place in prepared in your favorite way pans

I do the 3 mini loafs we prefer, starting to test at 35 minutes

Have done 1 large and start testing at 50 minutes, all ovens are different

Generally, takes 5 minutes longer then test times

Let cool about 5 minutes, remove from pans

This is a wonderful treat bread as it does have a lot of ingredients if you do as I do. It freezes great. I can assure you your family will love it. You might even have your own ideas on what to add or subtract using what you have in your pantry or cupboard.
