Stuff Your Peppers, Or Meat Loaf Add In, Or Both!!
Today I was blessed with some beautiful yellow and orange peppers from my daughter. In our area this time of year nice ones are sometimes hard to find. I immediately started planning what I should do to use them to their best advantage. Lots of ideas swirled around in my head then the light bulb finally went off, stuffed peppers. I like to do half ones instead of the whole thing at one time. I rarely have known anyone who eats an entire whole pepper depending on the size. These were really big. If I was going to eat just the pepper that might work, but I, for one, need other things to go with.
Next, I had to decide what to stuff them with because they were not in my rotation for the week. I decided to go with rice and a few other things I had on hand.
Here is what I came up with: amounts to your liking
Organic precooked brown rice 1 3/4 cups
Shredded carrots 2/3 cup
Drained, squeezed and chopped canned artichokes 1/2 cup
Herbes de Provence
Feta cheese 1/2 cup
Stuffed my prepared peppers
Baked at 375 degrees for 28 minutes, time depends on thickness of pepper
Topped each with about a TBSP of shredded taco blend cheese
Placed back in oven for 2 more minutes
I had leftover stuffing and the next day I added it in my ground turkey loaf mix. This would also be great in a ground beef loaf. Like I always say, nothing goes to waste.
