Kick UP A Store-Bought Mix, Support Your Local Farmstand! It's A Win Win!!
Right now, blueberry season is upon us here in Vermont. Not sure if it is just me, but to me they seem much sweeter this year. On another note, local blueberries in season are always special no matter what. Never had a blueberry I didn't like.
There are many recipes' blueberries excel in and are most often made. Pie, crisp, jam, pancakes and muffins are the ones most talked about. WE are a fan of all and then some. Today pancakes were on my menu plan. I decided to keep them simple and quick for my time schedule. I went with bisquick for my base and added in some healthy ingredients to kick them up a notch! Bisquick has several different options and you would use whatever you prefer, or any mix you favor.
Here is what I did today:
1 1/2 cup of bisquick
2 eggs
1 1/2 cups milk of choice
Teaspoon of cinnamon, or to taste
1/3 cup plus 2 Tbsp of leftover canned pumpkin (leftover from another recipe)
1 1/2 cup of blueberries (mine were large, adjust amount to your size and liking)
Mixed together and let set 5 minutes to slightly thicken
Fried in way of choice
Served with local maple syrup and optional butter
Pancakes are great frozen and reheated in the toaster or microwave. Now is the time to make a few batches and freeze for when fresh blueberries are long gone. Yes, you can make pancakes from frozen blueberries, I just prefer them from fresh. Once again, your kitchen your family your choice.
No matter what, grab a few containers from your local farm stand. Support them as their season in our area is short.
