It Isn't Always About Broccoli, Try This for A Change!!

Happy Holiday weekend everyone.

For some reason it seems to me, every recipe that boasts health benefits include broccoli. Don't get me wrong, I love broccoli, but I also love other vegetables with health benefits too. For me, it isn't always about broccoli!! And today is an example of that.

I know a lot of you make egg muffins, but if not, and you want something quick, simple, and healthy you should be. Recipes are everywhere for them, and the reason is, simplicity. If you are fortunate enough to have your own eggs like we do even better. If not, there are places everywhere these days to find them. Do yourself and your family a huge favor and search them out. You will be so glad you did. They keep for months refrigerated when fresh and you control the length of time which means the quality of them.

Oven will be at 350. Time will depend on the size of your muffin tins, mine are a little larger than regular size so mine are ready in 20 minutes. If yours are the smaller ones anywhere between 15 and 18 minutes will do it. If firm to the touch when pressed on they are done.

Here was my combo today:

Precooked asparagus chopped

Shredded carrot

8 beaten eggs (please note my eggs were dif sizes from my chickens)

Shredded cheddar cheese combo

I did not use any added spices today, your choice of course

Sprayed my muffin tin

Placed my asparagus and shredded carrot first, amount of choice (about 2 Tbsp)

Poured in my beaten eggs until almost to the top

Topped with my shredded cheese amount of choice

Baked for 20 minutes

Let cool in tin a couple minutes then removed to my dish

It's just that simple. Pretty much anything goes in egg muffins. Larger pieces might need to be precooked a bit. That depends on consistency you prefer your add ins to be. They reheat in about 45 seconds or are even good cold or room temp. They can be made in any type of vessel, as long as they are firm to the touch when checked for time you will be good to go.

The next time you need something quick, try some with whatever you might have on hand. If you have kids just getting into cooking these are great for them to start with.
