I'm Pretty Sure He Wasn't Listening Anyway!! And That's How I Roll!
Today my hubby and I started off our morning coffee with as usual my menu for the day. I sometimes offer choices and I sometimes don't, depending on my mood. As I have said before, we are on different wave lengths with our food likes and dislikes. My thought for today was burgers with sauteed mushrooms, red peppers and onions, with optional cheese. I prefer a very colorful plate; he prefers what I like to call basic brown.
As the morning went on, I began to wonder if that appealed to me after all, or if something else might make me happier. I opened my fridge and the first thing I noticed was my mushrooms. That's when it happened, stuffed mushrooms popped into my head. As I have also stated before, stuffed mushrooms and fall/winter seem to go together to me, and it is winter after all, and a very cold day. I could run my oven too and cozy up the house even more, a win win. And so that is where I went. Does he like stuffed mushrooms? no. Did I feel guilty changing things up, no, I'm pretty sure he wasn't listening anyway, if he even ever does......
Here is what I did today (I do have several other stuffed mushroom recipes on here)
Wiped down and removed mushroom stems, placing caps in my casserole dish
Sauteed 1 heaping cup of shredded carrots, 1 heaping cup of shredded zucchini, and spices of choice until all moisture was cooked out (this is important)
When done I removed from heat and added 3 heaping TBSP of panko breadcrumbs and ¾ cup of shredded Colby Jack cheese
Once cheese melted, I stuffed my mushroom caps liberally (this made enuf filling for number of mushrooms in photo)
Baked at 375 for 18 minutes, time will depend on size of mushrooms amount of stuffing and how well done you prefer them (generally 18-20 minutes works)
Best if served hot and cheese is nice and melted
How did this all turn out you are wondering? He ended up with a plain cheeseburger and chips, and I ended up with a bun less burger topped with red peppers and onions and a side of zucchini. No mushrooms in sight but lots of color, and this is how I roll some days. I will, however, enjoy the mushrooms another time, when the spirit hits me.
