Embrace Celery for The Health Benefits, One Way I Enjoy!!
Stuffed celery has been around for as long as I have, I do believe, and probably long before that. I am a true fan of them. Through the years I mostly stuffed them with cream cheese and chopped green olives or chopped black olives. There has also always been of course, stuffed with peanut butter. For some reason I just could not get into that. Mainly it came along as a healthy snack for kids and dieters, and for a while was touted everywhere. Lately I have not come across them as much, but as always, the times have changed, and so had my desire for them. But that changed recently and because of that I wanted a change up from my usual mix.
This is what I have been making lately and I might add I find it delicious and still fairly simple and kind of healthy, I'll let you decide. The mixture can be made with fat free or light ingredients as well. The key to any mix is to be sure your cream cheese is at room temperature to blend the ingredients well. Not a fan of stuffed celery? try my mix on an English muffin, crackers, toasted baguette or even in a sandwich.
My mixture: Amounts of your choice
Room temp cream cheese (not flavored)
Shredded cheddar cheese of choice
Chopped walnuts or nut of choice, pecans are great here too
Wipe down your celery stalks with a damp paper towel, let dry well
Cut into size pieces of choice
Stuff while mixture is still room temperature for easy spreading
It's just that simple. If this does not trip your trigger, try a combo your family might like, celery is low in calories, and has a great amount of health benefits, Vitamins A, C, and K. and is 95 percent water. The best part for me is if all that is true, I have a little more flexibility in my stuffing ingredients. It's a win win for me.....
