End To My Season Post! Chic Pea, Pepper Burger, Grab That Pantry Staple And Go!!

Please note, this will be my last post of this season. I, once again want to thank those who messaged me, shared my posts, and shared some of their ideas with me. If all goes well will see you in the fall. I hope you all have a wonderful, safe summer. And when we meet again, that we will all be in a much better place in our country!! Be safe!!

 

Today I am posting a favorite burger of mine, it has few ingredients, most you probably have in your pantry. However, if the fresh pepper is not, feel free to use well dried roasted red peppers, diced fine, or another fresh veggie you do have. The key to this recipe is keeping it simple. I do have a leftover ham and apple pattie/burger here on page 4 from last year if you are lucky enough to have ham leftover.

 

Here is what I do:

In my food processor I pulse lightly: (see note)

1 can rinsed and well drained to dry, chic peas

1 small or half of a large fresh red pepper cut in chunks, just until the mixture resembles just a little smaller then a pea. Do not make this mixture mushy, or like a paste, you want to see little small pieces of the pepper and chic peas, another words don't process to death!!

Note: OR you can mash the chic peas slightly and finely dice the pepper

Scoop into a bowl and add:

2 beaten eggs

Spices of choice in amount of choice, see note below

1/4-1/3 cup of bread crumbs of choice, start with the 1/4 and go from there if too wet

Mix together, and if possible, refrigerate at least 30 minutes to firm up, this works well for any bean or other veggie type burger

Form into 4 burgers or size of choice

Fry in way of choice, on medium high about 4 minutes on each side, be sure first side is firm and nicely done before turning carefully

 

I am not a green pepper fan, I find them to be bitter, I love any colored ones and today I had red so went with that.  I have also made these with shredded cheese in them 

Note: I also use different spices depending on my mood. Today I went with chili powder, cumin, turmeric, black pepper and Herbes de Provence. I do spice these well as chic peas tend to be bland. I have however, gone another way with my spices, creating a different concept. 

I love these as is, on a toasted English muffin, topped with any and all burger topping ideas, even as a side with eggs. Maybe you can think of another way to have them after all it is your kitchen, your choice!!
