You Are Never Too Old To Learn!! Plus Simple Pound Cake Replacement!

Today my son phoned me and wanted to know, because they cannot get eggs in their store in their area, if you can substitute apple sauce for eggs in a cake recipe. I had no idea, mainly because I am not a true baker, and also, I have never not had an egg available to me all through the years. My response was "google it and let me know please." He called me right back and said 1/4 cup of unsweetened applesauce can replace each egg. I did know you can replace the oil in your recipe with applesauce or yogurt and have done that many times. So, to those of you who are saying you already knew about doing if for eggs, kudos to you, to those of us who never knew that , now we do!! And he said it worked great, bonus!!

Today I am making a simple cake that I call my pound cake replacement. I like a pound cake now and then, you can top with strawberries and whip cream for a mock strawberry short cake, toast it and top with ice cream drizzled with a choc or caramel sauce, dice it up and layer with pudding and whip cream layers, and of course eat just plain with a cup of tea or coffee. And no, I did not replace the eggs with applesauce, I will have to digest that idea for a bit and go from there!!

Whisk together:

1 1/2 cups flour of choice

2 tsps. baking powder

3/4 tsp of salt of choice

Mix together:

2 beaten eggs (I always beat them first then add rest of ingredients in bowl)

3/4 cup of sugar

1 tablespoon of dried lemon zest, or to taste, or 1 1/2-2 tablespoons of fresh lemon zest(OPTIONAL)

3/4 cup of Greek yogurt, I use fat free, your choice here

1/2 cup of a neutral oil, or coconut oil (do not recommend olive oil)

1 1/2 tsp of vanilla

Combine the two mixes, pour into a sprayed or greased bread pan, bake at 350

For timing start checking at 40 minutes, DO not over bake this, but may need up to 50, will depend on your oven and your bread pan size, coated pans and glass will take a little less then the 50. Cool 10 minutes, remove from pan, cool completely before slicing!!

The reason I said lemon zest optional is because not everyone might have any lemon on hand, and some people might not like lemon flavored other options this will be used for, again I will say, your kitchen, your choice!!
