Oven 375, Time 25-30 minutes
Move over, turkey and beef, pork is another one of my fav ways to go!! This is a recipe I love because it uses ground pork, rice, and is simple and fast. I however whir up as I like to say, my own pork in my food processor. If you can find ground pork in your supermarket that works great. I find, however, the store bought tends to have a lot more fat then I care for, and in my area hard to find. It really is easy to make your own, I just slice a pork tenderloin in 1 inch thick pieces, then freeze until slightly frozen, then cut in chunks and pulse in my processor till thickness desired.
Here is my simple recipe for the pork balls and also for a quick dipping sauce that I like, hint, it is even good drizzled on most vegetables. Today I made fresh green beans as a side dish, mainly because i like the dipping sauce drizzled over the hot beans!
1 1/4 pound of ground pork
1/2 cup of precooked rice of choice
1 beaten egg
Turmeric, black pepper, garlic powder, and dried thyme (go easy on this spice) to taste
2 tablespoons of lite soy sauce, or sauce of choice here
Mix well and if possible chill in fridge for 30 minutes, if not that works too
Shape into tick over golf size balls (see photo)
Place in lightly sprayed pan and bake at 375 for 25 minutes, check for doneness and might need 5 minutes more
These can be used in a slider bun squashed down, as an appetizer, as a lunch with a veggie, as a sub topped with pasta sauce, on pasta in a soup and on and on, oh and sliced on pizza!!
My simple dipping sauce:
Start with equal parts, Dijon mustard or mustard of choice
Maple Syrup and a soy or teriyaki sauce, and if desired some ginger to taste
Mix well, then tweak to your liking adding a little more of this or that if needed...use as a dipping sauce or drizzle over, your kitchen, your choice!
