My Italian Cauliflower Steaks Married To Cheese, Yum! Cutting Tips!
I loved cauliflower long before it became so popular, recently showing up as cauliflower steaks, cauliflower rice, cauliflower pizza crusts and cauliflower mac and cheese (I also have a recipe on here for that, which got great reviews). To me, cheese and cauliflower is the ultimate marriage of flavors, and sundried tomatoes are another favorite of mine. No surprise I love all 3 together and this recipe is a favorite of mine.
First a few tips on cutting the cauliflower into steaks I have learned from experience. Be sure to leave the stem intact level or just below the head when you clean and fix it before cutting. The stem helps hold the florets intact. Next start cutting your steaks a good half inch in on each side. Finally be sure you have a very sharp knife, preferably a bread knife for length. Cut at least a tick away from 1/2 inch or larger. Lastly, move to pan with a spatula carefully. Some recipes say to turn half way through, I do not bother, your kitchen your challenge, lol!! Yes, of course you will have leftover pieces, save for another day, another meal. Rice it, steam it, or toss in a sauce etc. or just roast right alongside the steaks......
Here is what I do: oven 425 30-35 minutes
Cut my steaks
Spray or brush both sides with olive oil (I used a garlic olive oil spray this time)
Single layer in sheet pan
Sprinkle with Italian seasoning, to taste, and any other spices of choice if desired
Bake in a preheated 425 degree oven for 25 minutes, then start poking with a knife, should start getting soft
Test every 5 minutes until done to your liking(thickness matters here on time)
Remove from oven, top with shredded cheese of choice, I like an Italian combo/mixture, or mozzarella and parmesan, don't skimp here
Top with sliced or diced sundried tomatoes, amount of choice
Put back in oven for another 8-10 minutes, melting the cheese and heating the sundried tomatoes through
These are great eaten as is, however, leftovers can also be chopped and added to some chopped tomatoes and used on rice or pasta, or even chopped and used as a pizza topping
Note: today I went with cheese in my fridge which was mozzarella and cheddar, I have used many different cheeses and combos, your kitchen, your choice!!!
