Breakfast?, Lunch?, Dinner?,Try A Simple Egg White Fritatta!!
I love a delicious frittata, any time of day works for me. I do have another frittata recipe on here with the whole egg, and I love that one too. To me, what is in the frittata makes it, and anything works in one, so the sky is the limit as they say! Today I wanted to go a little lighter after all the holiday feasting so decided on an egg white one. Once again, being a snowy day and not getting out, I went with leftovers I had in my fridge and I might add, this was exactly what I was looking for, something different, the beauty of a frittata in the first place. Also they can be the size you want for the size family you are cooking for, or the amount of ingredients you have to make one with, a win, win all around, and quick!! Here is what I did today: Oven temp 350 degrees, Time 10-15 minutes or till set and glossy
5-6 fresh large egg whites, or about 1 1/4 cups if using the cartons, well beaten
Sauteed red peppers, diced, precooked butternut squash pieces, chopped, cauliflower floret precooked pieces chopped for a few minutes to dry them out
Added to the veggies the well beaten egg whites, just covering the veggies, and spices of choice, I used herbes de provence
Cooked until the bottom was set, 2-3 minutes, then added some precooked bacon lardons
Topped with some small dollops of light cream cheese, placed in oven
Baked in the 350 degree oven for 10 minutes and was done, edges just started to curl
Remove from oven and let set 5 minutes or so before cutting
Note: size of pan and thickness of egg whites will determine actual time.
Doneness can be checked many ways, jiggle pan should not move, press on top should be firm and look glossy, or check by sticking a sharp knife in center, should come out clean, your kitchen your choice!!
Is this a crazy frittata combination?, sure is, but once again anything goes with eggs, leftovers sometimes are a cooks best friend, and cooking is all about imagination. Next time you have a little something extra, don't toss it frittata it!!
