Can Rice Get Any Better? You Be The Judge! My Tweaked Coconut Rice!
Are you sick of the same side dish or rice recipe and looking to change it up a bit? So was I. I love coconut rice and decided to make my own a little different and it was a huge success. Served as a side dish with pork or chicken, or alone, this rocks. It is really simple, note I have never tried it in a rice cooker, but no reason it shouldn't work I am thinking. It has a simple hint of coconut and then you think hmmm what else do I taste, could that be a taste of apple? Give it a try if you are into these types of recipes. It is a keeper in my family. Here is what I did, note the recipe can be easily doubled for your size family. Today I served it with pork tenderloin medallions and my cabbage I blogged recently!!
1 cup Jasmine rice
1/2 cup coconut milk
3/4 cup of apple juice, (see note)
1/2 teaspoon Fines Herbes
Rinse 1 cup of Jasmine rice, place in pan
Add 1/2 cup of coconut milk of choice (I tried a new powdered one you just add water too, worked fine}
Add 3/4 cup of a good quality apple juice of choice
1/2 teaspoon of a green spice of choice I used Fines Herbes, and have also used Herbes De Provence
Stir well
Bring to a boil, lower heat to simmer, cover, simmer for 15 minutes
Fluff with fork re cover and let set at least 10 minutes, fluff again and serve
Note: I do not like a watery rice, I like a little bite to my rice, however feel free to add another 1/4 cup of apple juice if you don't, and cook a tad longer for a softer rice, your kitchen your choice!!!
