Call Them What You Want, Use Them How You Want!! Muffin? Dessert?

Everyone has a basic muffin recipe, or a package mix they use/like. I like a muffin now and then but my family loves muffins. I have tweaked many a muffin recipe through the years, taken something out or added something in. Two of my favorite ingredients in the small amount of baking I actually do are shredded coconut and cinnamon. I try to add them into any recipe I can, oh and yes my homemade vanilla extract. This recipe is no different, it includes all 3 of my fav ingredients. The recipe is as follows, and just a reminder here, always check your baking powder best by date, and even tho this recipe does not call for it your baking soda, they do have best by dates......

Oven 400, Time 18-20 minutes

Whisk together:

2 cups flour of choice

1/2 cup of sugar

3 teaspoons of baking powder

1/2 teaspoon salt

3/4- 1 teaspoon cinnamon (to taste as they say)

2/3 cup shredded coconut, set aside

Mix:

1 large beaten egg

1/3 cup melted coconut oil (veg or canola can be used but will effect the coconut flavor some)

2/3 cup milk of choice

Heaping teaspoon of vanilla

Add to dry mix

Place into sprayed muffin tins

Dot center with about 1 1/2 tsp of jam of choice ( I used peach today)

Sprinkle with little more cinnamon/sugar if desired

Bake at 400 degrees for 18-20 minutes, will depend on size of your muffin tins as will amount

Cool for a few minutes in tins, then remove and serve

These are a dense muffin, as my daughter said, these could be a dessert bread topped with vanilla bean ice cream, she also said she would eat these for breakfast or dessert, and then my husband said this reminds me of cornbread, sooooo bottom line your kitchen your choice to call them what you want!!!
