Buffins Anyone? Blueberry Lemon, Raspberry Lemon, You Name It!!

That is what my husband calls these muffins because they are made with premade biscuit mix. To me they are kind of like a cross between a biscuit and a muffin, another words a little denser then a muffin might actually be. They are simple and quick to make with few ingredients, very tweakable, and delicious to boot.

Here is what I do:

Mix together:

2 cups of your fav biscuit mix, and there are several types out there now, including low fat and GF in some brands

2/3 cup of sugar

1 tsp of cinnamon or to taste

1 heaping teaspoon of dried minced lemon peel (or at least 2 tsps. of fresh grated peel)

Next:

Beat 1 extra large egg

Add in:

1 cup of your favorite Greek yogurt (I use plain not flavored)

Mix well

Add to dry mixture

Add in:

1 cup of blueberries

Spread in lightly sprayed muffin tins 2/3 full

Sprinkle tops with cinnamon sugar mix (optional)

Batter will be thick

Bake at 400 degrees for 18-20 minutes or till done

Please note: I have extra large muffin tins therefore resulting in 9 buffins, if you have smaller ones, you should get 12
