This recipe is for my fruit loving sister in Florida, who is a fruit a holic!! But not always sure what to do with it!
I use a lot of fruit, frozen and fresh in seasons, and also 100 percent fruit juices in my cooking. Mainly I like to sautee in the juices versus water, butter or oils, added flavor is another plus, and also some citrus juices can be tenderizers in certain instances. And of course this means, leftover pieces of fruits, and a little extra juice hanging around. This all leads up to one simple way I tend to use up some of these lurkers in my fridge, either as a dessert with whip cream, just as is, warm or cold, or a side dish to accompany a meat item. I call it my stewed fruit, and it never tends to hang around this house for more then a day or two. I have made small batches with a little leftovers of this n that, or a large planned amount. I am not a fan of the canned fruit pie fillings, etc. that are so sweet. Making your own allows you to cut way down on the sugar, use your choice of added sweetener, sugar, honey or maple syrup, or even no added sweetener, and using up once again something you might have tossed that looked a little sketchy in your fridge or on your counter, and a small amount of some type of fruit juice.
Here is what I did today for a small amount using up what I had on hand:
This was invented from a shriveled very large gala apple, peeled and sliced
1/2 of a navel orange, peeled and sliced
1/2 cup of frozen peach slices, hanging out and getting freezer burnt
1/2 cup of leftover pineapple juice, (apple and orange juice are another favorite to use here)
Sprinkle of cinnamon, to taste
Plop of honey, or to taste
Simmered all together until fruit was to tenderness I desired, and pineapple juice was thickened.
The amount of time will depend on the thickness of your fruit pieces and your simmer stage, and kind of fruits used!
Make and use large amounts for your pie fillings, just make sure to cook down till all juice has evaporated....
Pears are another good fruit to use here, your kitchen your choice...
