Melt In Your Mouth Chocolate Coconut Cake, Valentines Day Treat??

I was given this recipe years ago, but have to admit added a few of my own tweaks, our favorite chocolate cake I make for special treat times, or company. It is very moist and makes a big 9 x 13 pan of yumminess. Dry cake be gone with this recipe. With or without a dollop of whip cream you will not be sorry you added this to your recipe box. Recipe follows, please read entire recipe through as there are some unexpected ingredients.

Oven 350, Time 35 minutes

Mix together in a large bowl:

2 1/2 cups of flour of choice

1 teaspoon of baking soda

1/2 teaspoon of baking powder

1/2 teaspoon of salt

1 heaping teaspoon of cinnamon

2 TBSP of instant coffee granules, optional enhances the flavor of chocolate

2/3 cup of shredded coconut

3/4 cup of dry unsweetened cocoa

Set aside

Mix together in another bowl:

2 large beaten eggs

1 1/3 cup sugar

3/4 cup oil of choice, I use coconut oil, but have also used canola, less expensive, just not olive oil

3/4 cup of greek yogurt

1 1/2 teaspoons vanilla

3 cups of shredded zucchini

2 TBSP liquid coffee if not using the granules, optional

Combine both mixes, pour into sprayed or greased 9 x 13 pan, top with 1/3 cup more of shredded coconut(optional)

Bake 35 minutes, or till done

NOTE: you will not taste the coffee but coffee enhances chocolate flavor, your kitchen, your choice!!

We like topped with a little whip cream sprinkled with a little more cinnamon
