Coconut, Yogurt, Lemon Muffins, Oh And Cinnamon And Vanilla Too, Can't Miss!!

Sometimes you just need a muffin and nothing else will do. Today was one of those days, and something different was on my mind. This is what I came up with that got raves from the family, and I have to admit it took care of that craving for all of my favorite things in one muffin. Here is what I did, I took a basic muffin recipe I use regularly and turned my mind loose. Please read entire recipe before you begin....

 

Oven 350 time 15-20 minutes

Note: I have jumbo muffin tins and this recipe made 11 in 20 minutes, size of your muffin tins will determine how many and how long they will take to bake, small 15 minutes, medium 18, large 20, this is where your bread/cake tester will be helpful

 

First mixed dry ingredients:

1 and 1/2 cup flour of choice, I used white this time, all purpose

2 teaspoons of baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon dried minced lemon peel, or 2 teaspoons of fresh

1/2 cup coconut, mix all together

Next the wet ingredients:

3 beaten eggs

3/4 cup of sugar

1/2 cup of coconut oil, melted amount, or oil of choice

1 cup greek fat free yogurt, or yogurt of choice

1 teaspoon vanilla, mix all together

 

Combine the 2 mixes, place in sprayed muffin tins, top with a little more coconut if desired

Bake until golden brown and test done

Cool 5 minutes, remove and serve warm if desired!
