Claytons Birthday Cake, Pineapple, Coconut, Chocolate Macaroon, 5 Stars!!
My son-in-law has great taste, he likes all of the food I do, and I love to cook for someone who loves and appreciates great cooking....and also, I might add is a great cook himself.
Today is his birthday, and I wanted to combine some of his/our fav ingredients in one cake, and an idea popped into my head, pineapple, coconut, chocolate being three of them...and macaroons another favorite.
Have already been asked to blog this recipe, it is very simple but oh so good. I just baked it in a 9 x 13 pan, but it can be made into cupcakes, layers, or whatever your needs at the time.
1 box of white cake mix, with changes and add ins as stated below:
Pineapple juice in place of the amount of water your cake mix called for
Add 1/3 cup of shredded coconut to the batter
Place batter in prepared pan
Top with 1/4 cup shredded coconut, and sprinkle with chocolate pieces of choice, I used dark chocolate wafers..
Bake amount of time your cake mix calls for, turn off oven, top with a little more of your choc choice, place back in oven for 2 minutes to start to melt added chocolate.
Let cool before cutting.
