Honey, Carrots, Yogurt, Coconut, Not A Yogurt Combo, But Better! Bread/Muffins!

I love carrot cake..I also love my tweaked version of a Skinny Ms. recipe for muffins with carrots, but made into a bread instead...I also love coconut so added some to the recipe, optional for you! I am a firm believer that any muffin recipe can be a bread, and any bread recipe can be muffins!

I am not fond of making muffins, and only make them when sending to a specific function, otherwise it is a bread all the way for me....I also do not like muffins in damp muffin liners, and believe me, I have had my share of them through the years....I also do not like trying to make sure the muffin cups are filled the same height, I know, use ice cream scoops, measuring cups, etc. OK, something else to wash, and why bother with all that extra work and time when they both taste exactly the same, muffin or a slice of bread??? of course a muffin looks prettier, but so can a few slices of bread....and bread is much easier to slather with butter, honey, cream cheese, you name it, and even holds more slathered goodness. and we, in my family, are slatherers, if there is such a word.

This recipe as I stated above has been tweaked to my way of doing things...Oven temp is 350, about 40-50 minutes, will depend on the size of bread pan you use, if muffins, about 15-20 minutes, just test with your bread/cake tester around the time you think it might be getting done...you know your oven better then I do...Any serious baker should have a baking tester for breads, muffins and cakes..

Wash, peel, and Grate/shred carrots to equal 2 cups. I used 1 really large carrot and it was exactly 2 cups.

Combine:

1 3/4 cup of flour of choice or combo of flours

1 and 1/2 teaspoons of baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ginger

1/2 teaspoon cinnamon, set aside

Next Mix:

2 beaten eggs

1/4 cup oil

1/2 cup honey

Teaspoon of vanilla

1 cup of plain low fat greek yogurt

Large handful of shredded coconut, about 1/3 cup, forgot to measure (optional)

Tip: Always measure your oils first, then your honey next in measuring device and honey will slide right out!

Add: wet to dry ingredients, then add carrots

Place in greased pan or cooking vessel of choice, and bake....

Tip: If you want to add a little pizazz to your bread/muffins topping, I always keep a shaker heavy on the cinnamon, light on sugar, to sprinkle on the tops before baking, makes for a more professional finished look.

Please Note: This bread is very moist when right out of oven, suggest you let cool down before cutting/ serving....
