You Cannot Go Wrong With "Real" Maple Syrup Or Pudding Cake!!
When I was young Log Cabin syrup was a treat in our family..we did not have it often but when we did it was extra special...it wasn't until I was quite a bit older that I even knew about VT. maple syrup...the first time I had some I was hooked...VT. "real"maple syrup is hugh in our family to this day....whenever I can fit some in a recipe, I am a happy camper, and so is my gang...when the kids were little we, of course, like a lot of people, tapped trees and boiled the sap down, had sugar on snow and waffles, pancakes, and French toast galore because for once it was something everyone loved and could agree on, even my picky eaters...of course, there are all kinds of maple syrups and maple syrup products out there, each to his own tastes I always say....
If you have followed my recipes, you know I always use it in my baked beans, I also use it in home made bbq sauces, bread puddings and crock pot oatmeal, any time any place....below is a favorite dessert we some times indulge in, it is rich and is a treat and a little goes a long way...once again this was taken and tweaked from my maple syrup cook book from years ago....Have had so many requests for recipe had to include in my blog!!
Combine:
1 and 1/2 cup of flour, I use 3/4 cup white 3/4 cup 10 grain, choice of flour is yours
2 teaspoons baking powder, TIP: baking powder does have a sell by date, check yours often!
1/2 teaspoon cinnamon
1/4 teaspoon salt
Scant 1/2 cup sugar, "if you find the recipe too sweet cut down more, I cut this from 3/4 cup it called for in recipe"
2/3 cup chopped walnuts
Next add 3/4 cup of milk of choice, mix all together
Spread batter in 8 inch sprayed baking dish
IN THE mean time put on a low burner a saucepan with 1 and 1/2 cups of maple syrup, 3/4 of a cup of water, and 2 Tablespoons of butter to heat until butter is melted.
Slowly pour this over the batter
Bake in a 350 degree oven for 35-40 minutes until cake is browned, cake rises to top pudding sinks to bottom. Let cool to thicken pudding...
Note: I have a dark metal baking pan I use for this and it bakes in 30 minutes and is perfect, if in doubt just stick your cake tester into the cake half, should come out clean....you will not go wrong with this recipe.....
