Right now cabbage is a great buy at the market. St. Patrick's Day is upon us, and corned beef and cabbage is popular, at least with most of us. For some, however, it is not a favorite, but no problem. Cabbage is a versatile veggie, and a lot can be done with it, some complicated and some simple. That is what my husband calls these muffins because they are made with premade biscuit mix. To me they are kind of like a cross between a biscuit and a muffin, another words a little denser then a muffin might actually be. They are simple and quick to make with few ingredients, very tweakable, and delicious to boot.
