First off I need to say this will be my last regular posting for the summer, as summer is our busy time of year. Our family is big on pickles, all kinds shapes and sizes. This recipe is a family favorite, keeps in the fridge 2-3 weeks, no canning involved, so I make a batch that will last for that long only. I, thanks to my father, am a lover of beets, fresh cooked,  have now and then had jarred, but for my preferences they are too done. Beet greens were a favorite of his, and so he always planted them in our gardens. As I have mentioned before, and will surely mention again, my mother-in-law was a great cook. My husband has raved about her broiled grapefruit for years, in fact, when we were first married, he was the one who made it for me, the first time I had ever even heard of it...I also need to mention her love for butter and anything sweet, maple syrup being one of them. Salmon and black beans, married in a yummy cake, who knew?
