Can Rice Get Any Better? You Be The Judge! My Tweaked Coconut Rice!
Are you sick of the same side dish or rice recipe and looking to change it up a bit? So was I. I love coconut rice and decided to make my own a little different and it was a huge success. Served as a side dish with pork or chicken, or alone, this rocks. It is really simple, note I have never tried it in a rice cooker, but no reason it shouldn't work I am thinking. It has a simple hint of coconut and then you think hmmm what else do I taste, could that be a taste of apple? Giv

Call Them What You Want, Use Them How You Want!! Muffin? Dessert?
Everyone has a basic muffin recipe, or a package mix they use/like. I like a muffin now and then but my family loves muffins. I have tweaked many a muffin recipe through the years, taken something out or added something in. Two of my favorite ingredients in the small amount of baking I actually do are shredded coconut and cinnamon. I try to add them into any recipe I can, oh and yes my homemade vanilla extract. This recipe is no different, it includes all 3 of my fav ingredie

Got A Cabbage, Got A Red Onion, Got Apple Juice? Now It's A Side Dish!!
Right now cabbage is a great buy at the market. St. Patrick's Day is upon us, and corned beef and cabbage is popular, at least with most of us. For some, however, it is not a favorite, but no problem. Cabbage is a versatile veggie, and a lot can be done with it, some complicated and some simple. I generally opt for simple these days, few ingredients and easy. Like most dishes, this gets better overnight. This is what I do: Slice 1 red onion thinly Slice 1 cabbage thinly Toss

Breakfast, Lunch, Dinner, Snack, It's Up To You!!
I love breakfast foods, but breakfast not so much. Give me lots of coffee, and a quick something, and off I go. Omelets are a favorite at another time of day, but creating first thing in the morning just does not appeal to this cook, and to me, an omelet should be interesting and full of great things. Another favorite of mine any other time of day is my mashed potato patty topped with a nice farm fresh chicken egg and some smokehouse bacon pieces (lardons if you must). Livin

Wild Rice, Zucchini, Cheese, Eggs, Not Your Typical Muffin Recipe!! Lunch?
I love non muffin muffins as I call them, anything muffin tin size. Through the years when I mentioned to my teenagers and my husband "I am tired of the same thing day in and day out for meals" I got the look. That meant I was going to get creative and sometimes that could work out great and other times it could by scary. I, on the other hand, loved when I felt that way because I loved creating in my kitchen and if they ate it fine and if not they could fix what they wanted,

Buffins Anyone? Blueberry Lemon, Raspberry Lemon, You Name It!!
That is what my husband calls these muffins because they are made with premade biscuit mix. To me they are kind of like a cross between a biscuit and a muffin, another words a little denser then a muffin might actually be. They are simple and quick to make with few ingredients, very tweakable, and delicious to boot. Here is what I do: Mix together: 2 cups of your fav biscuit mix, and there are several types out there now, including low fat and GF in some brands 2/3 cup of sug
