Nacho Casserole, Nachos, Nacho Pie, Call It What You Want In Your Kitchen!!!
Oven 375 time 15-20 minutes One of my favorite snack foods is nachos, tortilla chips, round, triangle, etc., but my fav are the scoops. I love that you can scoop up some yumminess and not battle your toppings falling off. I also love to use them on the bottom of what I call my nacho casserole. I have made in the past this casserole with all kinds of toppings, mainly what I had on hand and of course you have to have cheese, sour cream and even avocado if you are so inclined fo

Simply Simple Stewed Fruit, Toss The Sugary Canned!!
This recipe is for my fruit loving sister in Florida, who is a fruit a holic!! But not always sure what to do with it! I use a lot of fruit, frozen and fresh in seasons, and also 100 percent fruit juices in my cooking. Recipe follows, please read entire recipe through as there are some unexpected ingredients. Oven 350, Time 35 minutes Mix together in a

Orange And Cauliflower Combo, No Way, Yes Way!! And So Simple!!
It was one of those days, almost grocery shopping day, but not quite, so time to hit the fridge for a side dish idea! I love apples cooked with cabbage or butternut squash, but the idea of apple and cauliflower just didn't trip my trigger, or as I like to say, sounded ewww to me. I did, however have a couple of oranges hanging out for a while waiting to be the something different in a recipe., and so this was born, and I might add don't say gross until you try it, if you are

Provolone Crust, Salmon, Red Pepper Quiche, Or Your Crust Of Choice!!
I love quiche, but have stated before not a fan of pie crusts. One of my favorite ways to bypass the crust is to use cheese, thin slices, and forget the shredded cheese in the filling, rather using more healthier choices to fill in for the cheese. Today I had poached a huge piece of fresh salmon and had a lot leftover so decided to make a quiche from some of the leftovers, again I say leftovers are always a gift if you are a cook, that and a little bit of imagination.
